Ingredients
  

  • 1 pound boneless, skinless chicken breasts cut into bite-sized pieces
  • 2 tablespoons soy sauce low-sodium preferred
  • 1 tablespoon mirin Japanese sweet rice wine
  • 1 tablespoon sake optional, but adds depth of flavor
  • 1 tablespoon honey
  • 2 tablespoons vegetable oil
  • 2 cloves garlic minced
  • 1 tablespoon ginger freshly grated
  • 1 cup zucchini sliced
  • 1 cup mushrooms sliced
  • 1 cup onion sliced
  • 2 tablespoons butter
  • 1 teaspoon sesame seeds for garnish

Method
 

  1. In a small bowl, whisk together soy sauce, mirin, sake, and honey to create the marinade. Set aside.
  2. Heat a large skillet or hibachi grill over high heat. Add vegetable oil and once hot, add chicken pieces. Cook for about 4 minutes until they start to brown.
  3. Add minced garlic and grated ginger to the skillet. Stir-fry for another 2 minutes, ensuring the garlic doesn't burn.
  4. Add sliced zucchini, mushrooms, and onion to the skillet. Cook for 3-4 minutes, stirring frequently, until vegetables are tender-crisp.
  5. Pour the marinade over the chicken and vegetables. Add butter and stir until everything is well coated and the butter has melted. Cook for an additional 2 minutes.
  6. Remove from heat, garnish with sliced green onions and sesame seeds. Serve hot with rice or noodles.
