Ingredients
  

  • 2 pounds boneless, skinless chicken breasts
  • 1 cup chicken broth low-sodium
  • 1 cup BBQ sauce plus more for serving
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Method
 

  1. Turn on your Instant Pot to the sauté function and add the olive oil. Once hot, add the chicken breasts and sear for about 2 minutes on each side to develop flavor.
  2. Add the chicken broth, BBQ sauce, smoked paprika, garlic powder, onion powder, salt, and black pepper to the Instant Pot. Stir to combine.
  3. Secure the lid on the Instant Pot and set the valve to sealing. Cook on high pressure for 10 minutes.
  4. Once cooking is complete, allow the pressure to release naturally for 5 minutes, then carefully perform a quick release for any remaining pressure.
  5. Remove the chicken from the Instant Pot and shred it using two forks. Return the shredded chicken to the pot and stir to coat with the sauce. Serve hot with additional BBQ sauce if desired.
