Ingredients
  

  • 1/2 cup extra virgin olive oil or another neutral oil like avocado oil
  • 1/3 cup acid (lemon juice, lime juice, or vinegar) freshly squeezed lemon juice is my top choice
  • 4 cloves garlic minced or pressed
  • 2 tablespoons Dijon mustard or whole grain mustard for texture
  • 2 tablespoons soy sauce or tamari use coconut aminos for soy-free
  • 1 tablespoon honey or maple syrup optional, for a touch of sweetness
  • 1 teaspoon dried oregano or 1 tablespoon fresh, chopped
  • 1 teaspoon smoked paprika regular paprika works too
  • 1/2 teaspoon black pepper freshly ground
  • 1 teaspoon kosher salt adjust to taste, soy sauce adds salt

Method
 

  1. In a medium bowl or large measuring cup, combine all marinade ingredients. Whisk vigorously for about 30 seconds until the mixture is fully emulsified—this means the oil and acid are combined into a smooth, cohesive liquid. Trust me, this step is crucial for even flavor distribution. Taste and adjust salt or acid if desired.
  2. Place 1.5 to 2 pounds of boneless, skinless chicken breasts or thighs in a large, resealable plastic bag or a non-reactive dish (glass or ceramic). Pour the marinade over the chicken, ensuring all pieces are completely submerged. Seal the bag, removing as much air as possible, or cover the dish tightly with plastic wrap.
  3. Refrigerate the chicken to marinate. For optimal flavor and texture without breaking down the meat, marinate for a minimum of 30 minutes and up to 4 hours for breasts, or up to 8 hours for thighs. Tip from me: Never marinate chicken at room temperature for food safety.
  4. When ready to cook, remove the chicken from the refrigerator and let it sit at room temperature for 15-20 minutes. This promotes even cooking. Discard the used marinade. Pat the chicken pieces dry with paper towels—this is the secret to getting a beautiful sear or grill marks.
  5. Cook your chicken using your preferred method: grill over medium-high heat for 6-8 minutes per side, bake at 400°F (200°C) for 20-25 minutes, or pan-sear in a hot skillet for 5-7 minutes per side. The chicken is done when it reaches an internal temperature of 165°F (74°C) at its thickest part. Let it rest for 5 minutes before slicing and serving.

Chef's Tips:
• For maximum flavor, score thicker chicken breasts lightly with a knife before marinating.
• Avoid marinating chicken for more than 8-12 hours, as the acid can start to 'cook' the surface, giving it a mealy texture.
