Ingredients
  

  • 1.5 lbs boneless, skinless chicken thighs Thighs stay juicier than breasts. Trim excess fat.
  • 1/4 cup extra virgin olive oil Good quality oil for the marinade base.
  • 1/4 cup plain Greek yogurt Full-fat recommended for best flavor and tenderizing.
  • 4 cloves garlic Minced or pressed.
  • 1 tbsp red wine vinegar Or fresh lemon juice.
  • 1 tbsp dried oregano Greek oregano is ideal.
  • 1 tsp smoked paprika Adds depth; sweet paprika works too.
  • 1 tsp ground cumin
  • 1 tsp salt Fine sea salt or kosher salt.
  • 1/2 tsp black pepper Freshly ground.
  • 4-6 pita breads Greek-style or pocketless pita.
  • 1 cup tzatziki sauce Store-bought or homemade.
  • 1 large tomato Diced.
  • 1/2 red onion Thinly sliced.
  • 1 cucumber Sliced or diced.
  • fresh parsley Chopped, for garnish.
  • lemon wedges For serving.

Method
 

  1. In a medium bowl, whisk together the olive oil, Greek yogurt, minced garlic, red wine vinegar, oregano, paprika, cumin, salt, and pepper until smooth. Add the chicken thighs and toss to coat thoroughly. Cover and marinate in the refrigerator for at least 30 minutes, or ideally up to 4 hours. Trust me, this yogurt-based marinade is the secret to incredibly tender, flavorful chicken.
  2. While the chicken marinates, prepare your toppings. Dice the tomato, thinly slice the red onion, and slice the cucumber. Chop the fresh parsley. If making homemade tzatziki, prepare it now. Warm your pita breads by wrapping them in a damp paper towel and microwaving for 20-30 seconds, or by heating them in a dry skillet for 30 seconds per side. Keep them wrapped in a clean kitchen towel to stay soft.
  3. Heat a large skillet, grill pan, or outdoor grill to medium-high heat. Remove the chicken from the marinade, letting excess drip off. Cook the chicken thighs for 5-7 minutes per side, or until they are deeply browned, have nice grill marks, and reach an internal temperature of 165°F. Tip from me: Don't crowd the pan; cook in batches if needed to ensure proper browning.
  4. Transfer the cooked chicken to a cutting board and let it rest for 5 minutes. This allows the juices to redistribute. Then, slice the chicken against the grain into thin strips or bite-sized pieces. Believe me, slicing against the grain is crucial for tender, easy-to-eat chicken in your gyro.
  5. To assemble, place a warm pita on a plate. Spread a generous spoonful of tzatziki down the center. Add a pile of the sliced chicken, then top with diced tomato, sliced red onion, cucumber, and a sprinkle of fresh parsley. Squeeze a wedge of lemon over everything. Fold the bottom of the pita up, then roll the sides in to create a neat wrap. Serve immediately and enjoy the vibrant flavors!
