- Preheat your oven to 425°F (220°C). In a large bowl, combine the olive oil, lemon juice, minced garlic, oregano, thyme, paprika, cumin, salt, and pepper. Add the chicken pieces to the marinade and toss to coat evenly. Let it marinate for at least 15 minutes, or up to 2 hours in the refrigerator for deeper flavor.
- Spread the marinated chicken pieces in a single layer on a baking sheet lined with parchment paper. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the edges are golden brown. Halfway through cooking, flip the chicken pieces to ensure even browning.
- While the chicken is baking, prepare your vegetables. Dice the cucumber and tomato, and thinly slice the red onion. Set aside.
- Once the chicken is done, remove it from the oven and let it rest for a few minutes. This allows the juices to redistribute, keeping the meat moist and flavorful.
- To assemble the gyros, place a warmed pita bread on a plate. Add a generous portion of the baked chicken, followed by the diced cucumber, tomato, and sliced red onion. Drizzle with tzatziki sauce and serve immediately.
