- Prepare your lettuce cups and aromatics. Gently separate the leaves from the head of lettuce, rinse them under cold water, and pat them completely dry with a clean kitchen towel or paper towels. Stack them on a plate and refrigerate. This keeps them crisp. Mince the garlic and ginger, and finely dice the onion and water chestnuts. Having everything prepped and ready (mise en place) is key for a smooth, quick cooking process.
- Cook the aromatics. Heat the neutral oil in a large skillet or wok over medium-high heat. Add the diced onion and cook for 3-4 minutes, stirring occasionally, until it becomes soft and translucent. Add the minced garlic and ginger and cook for just 30-60 seconds more until fragrant. Be careful not to burn the garlic. This step builds the foundational flavor layer.
- Brown the chicken. Add the ground chicken to the skillet. Use a wooden spoon or spatula to break it up into small crumbles. Cook for 5-7 minutes, stirring occasionally, until the chicken is fully cooked through and no pink remains. The goal is small, distinct pieces, not large clumps. If there's excess liquid in the pan, you can drain it off for a less saucy, more textured filling.
- Make the sauce and finish the filling. While the chicken cooks, whisk together the soy sauce, hoisin, oyster sauce (if using), and rice vinegar in a small bowl. Once the chicken is cooked, add the diced water chestnuts and pour the sauce over everything. Stir well to combine and cook for another 2-3 minutes until the sauce thickens slightly and coats all the chicken. Remove from heat and stir in the sesame oil.
- Assemble and serve. Transfer the warm chicken filling to a serving bowl. Arrange the crisp, cold lettuce leaves on a platter alongside small bowls of garnishes like sliced green onions and toasted sesame seeds. To serve, let everyone spoon the warm filling into their own lettuce cup, add their preferred toppings, and enjoy immediately.
