Ingredients

  • 2 cups cooked shredded chicken rotisserie or leftover chicken works great
  • 1/2 cup buffalo sauce adjust to taste
  • 1 bag tortilla chips about 10-12 ounces
  • 2 cups shredded cheddar cheese or a mix of cheddar and Monterey Jack
  • 1/2 cup blue cheese dressing for drizzling
  • 1/4 cup chopped green onions for garnish
  • 1/4 cup chopped cilantro for garnish

Equipment

  • Oven
  • Large baking sheet or oven-safe dish
  • Mixing bowl
  • Measuring cups and spoons

Method

  1. Preheat your oven to 400°F (200°C). This temperature ensures the cheese melts evenly without burning the chips.
  2. In a bowl, mix the shredded chicken with the buffalo sauce until well coated. Adjust the amount of sauce to your preferred level of heat.
  3. Spread the tortilla chips in a single layer on a large baking sheet or oven-safe dish. Evenly distribute the buffalo chicken mixture over the chips.
  4. Sprinkle the shredded cheese over the chicken and chips. The cheese will act as a binder and add that irresistible gooey texture.
  5. Bake in the preheated oven for about 10-12 minutes, or until the cheese is melted and bubbly. Keep an eye on it to prevent burning.

Notes

Chef's Tips:
• For a crispier result, broil the nachos for the last 1-2 minutes, watching closely to prevent burning.
• Avoid overloading the nachos with toppings to ensure even cooking and to prevent sogginess.
• Serve immediately for the best texture and flavor.
Food Safety:
• Ensure the chicken is heated to an internal temperature of 165°F (74°C) to kill any harmful bacteria.
• Store leftovers in an airtight container in the refrigerator for up to 3 days.
