Ingredients
  

  • 8 oz penne pasta
  • 2 tbsp olive oil
  • 1 lb boneless, skinless chicken breasts cut into bite-sized pieces
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 cup buffalo sauce
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1/4 cup blue cheese crumbles optional
  • 2 tbsp chopped green onions for garnish
  • Salt and pepper to taste

Method
 

  1. Cook the penne pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add the chicken pieces, seasoning with garlic powder, onion powder, salt, and pepper. Cook until the chicken is browned and cooked through, about 6-8 minutes.
  3. Reduce heat to low and pour in the buffalo sauce, stirring to coat the chicken evenly. Let simmer for 2 minutes.
  4. Stir in the heavy cream and bring the mixture to a gentle simmer. Gradually add the shredded cheddar cheese, stirring until melted and smooth.
  5. Add the cooked pasta to the skillet, tossing to combine with the sauce. If using, sprinkle in blue cheese crumbles and mix well. Serve hot, garnished with chopped green onions.
