- In a large pot, bring the chicken broth to a simmer. Add the chicken pieces, onion, carrots, celery, garlic, thyme, and rosemary. Simmer for about 30 minutes, until the chicken is cooked through and the vegetables are tender. Skim off any foam that rises to the surface.
- Remove the chicken pieces from the broth and let them cool slightly. Once cool enough to handle, shred the chicken into bite-sized pieces. Return the shredded chicken to the pot and season the broth with salt and pepper to taste.
- In a mixing bowl, combine the flour, baking powder, and salt for the dumplings. Cut in the butter until the mixture resembles coarse crumbs. Stir in the milk to form a soft dough.
- Drop spoonfuls of the dumpling dough into the simmering broth. Cover the pot and let the dumplings cook for about 15 minutes, or until they are puffed and cooked through. Do not lift the lid during this time to ensure the dumplings steam properly.
- If using, add the frozen peas to the pot in the last 5 minutes of cooking. Stir gently to combine. Serve hot, garnished with fresh herbs if desired.
