- Heat olive oil in a large skillet over medium-high heat. Season the chicken thighs with salt and pepper. Add the chicken to the skillet, skin-side down, and cook until golden brown, about 6-7 minutes. Flip and cook for another 5 minutes. Remove chicken from skillet and set aside.
- In the same skillet, add chopped onion and cook until softened, about 3-4 minutes. Add minced garlic and cook for another minute until fragrant.
- Sprinkle flour over the onions and garlic, stirring to combine. Cook for 2 minutes to remove the raw flour taste. Slowly pour in the chicken broth while stirring to avoid lumps. Add thyme, salt, and pepper.
- Return the chicken to the skillet, nestling it into the gravy. Reduce heat to low, cover, and simmer for 15-20 minutes until the chicken is cooked through and the gravy has thickened.
- If using, stir in the heavy cream for a richer gravy. Serve the chicken and gravy hot, garnished with fresh herbs if desired.
