- Heat the olive oil in a large skillet over medium-high heat. Add the chicken pieces and cook until browned on all sides, about 5-7 minutes. Remove the chicken from the skillet and set aside.
- In the same skillet, add the chopped onion and cook until softened, about 3-4 minutes. Add the minced garlic and cook for another minute until fragrant.
- Stir in the orzo pasta, diced tomatoes with their juice, chicken broth, oregano, basil, salt, and pepper. Bring the mixture to a boil, then reduce the heat to a simmer.
- Return the browned chicken to the skillet, nestling it into the orzo mixture. Cover and simmer for 15-20 minutes, or until the orzo is tender and the chicken is cooked through.
- Once cooked, remove the skillet from heat. Stir in the lemon zest and juice, and sprinkle with fresh parsley. Serve hot, topped with crumbled feta cheese.
