Method
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
- Set up a breading station with three shallow dishes: one with flour, one with beaten eggs, and one with a mixture of breadcrumbs, 1/2 cup Parmesan, garlic powder, oregano, salt, and pepper.
- Dredge each chicken breast first in flour, then in the egg, and finally coat thoroughly with the breadcrumb mixture. Press the breadcrumbs onto the chicken to ensure they adhere well.
- Heat olive oil in a large skillet over medium heat. Once hot, add the breaded chicken breasts and cook for about 3 minutes on each side until golden brown.
- Transfer the chicken to the prepared baking sheet. Spoon marinara sauce over each piece of chicken, then top with shredded mozzarella and the remaining Parmesan.
- Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly, and the internal temperature of the chicken reaches 165°F (74°C). Garnish with fresh basil before serving.
Notes
Chef's Tips:
• For a crispier crust, use panko breadcrumbs and let the breaded chicken rest for 10 minutes before cooking.
• Avoid overcrowding the skillet when browning the chicken to ensure even cooking.
• Serve with a side of pasta or a fresh salad for a complete meal.
Food Safety:
• Ensure chicken reaches an internal temperature of 165°F (74°C) to guarantee it's safe to eat.
• Store leftovers in the refrigerator within 2 hours of cooking.
