Ingredients
  

  • 1 lb boneless, skinless chicken breasts cut into bite-sized pieces
  • 1 cup uncooked long-grain white rice
  • 2 cups chicken broth low-sodium preferred
  • 1 can cream of chicken soup 10.5 oz
  • 1 cup frozen mixed vegetables thawed
  • 1 cup shredded cheddar cheese divided
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp dried thyme
  • Salt and pepper to taste

Method
 

  1. Preheat your oven to 375°F (190°C). In a large bowl, mix together the uncooked rice, chicken broth, cream of chicken soup, garlic powder, onion powder, and dried thyme. Stir until well combined.
  2. Add the bite-sized chicken pieces and thawed mixed vegetables to the bowl. Season with salt and pepper to taste. Mix everything thoroughly to ensure even distribution of ingredients.
  3. Transfer the mixture to a greased 9x13 inch baking dish. Cover tightly with aluminum foil and bake in the preheated oven for 35 minutes.
  4. Remove the foil, sprinkle half of the shredded cheddar cheese over the top, and bake uncovered for an additional 10 minutes, or until the rice is tender and the chicken is fully cooked.
  5. Remove from the oven, sprinkle the remaining cheese over the top, and let it sit for 5 minutes to allow the cheese to melt. Serve warm and enjoy your comforting Chicken Rice Casserole.
