- Pat the chicken breasts completely dry with paper towels. Season both sides generously with 3/4 teaspoon of the salt and 1/4 teaspoon of the pepper. This step is crucial for a golden sear and well-seasoned meat.
- Heat the olive oil and 1 tablespoon of butter in a large skillet over medium-high heat. Once hot, add the chicken breasts. Sear without moving for 5-6 minutes per side, until deeply golden brown and cooked through (internal temperature of 165°F). Transfer to a plate and tent loosely with foil.
- Reduce heat to medium. Add the remaining 1 tablespoon of butter to the skillet. Add the minced shallot and cook for 2 minutes until softened. Add the garlic and cook for 30 seconds until fragrant, being careful not to burn it.
- Pour in the white wine to deglaze the pan, scraping up all the flavorful browned bits from the bottom with a wooden spoon. Let it simmer for 2-3 minutes until reduced by half. This builds the foundation of your sauce.
- Reduce heat to low. Add the room-temperature Boursin cheese and heavy cream. Whisk continuously until the cheese is fully melted and the sauce is smooth and creamy. Stir in the remaining salt and pepper. Taste and adjust seasoning.
- Return the chicken breasts and any accumulated juices back to the skillet, spooning the sauce over the top. Let it warm through for 2 minutes. Garnish with fresh parsley and serve immediately with lemon wedges for squeezing over the top.
