- Preheat your oven to 375°F (190°C). In a large skillet, heat the olive oil over medium-high heat. Season the cubed chicken with salt and pepper, then add to the skillet. - Gently fold the browned chicken (and any accumulated juices) back into the skillet mixture. Pour the entire contents into a 9x13 inch baking dish. Spread it into an even layer. Cover the dish tightly with aluminum foil. Believe me, this foil tent is crucial for trapping steam to cook the rice perfectly.
- Bake, covered, for 35 minutes. Carefully remove the foil—watch for steam! Sprinkle the remaining cheese evenly over the top. Return to the oven, uncovered, for 10-12 more minutes, or until the cheese is bubbly and golden, and the rice is tender. Let it rest for 5-10 minutes before serving to allow the sauce to thicken.
