Creamy Coconut Chicken Curry

Ingredients
  

  • 1 tbsp vegetable oil
  • 1 lb boneless, skinless chicken breasts cut into bite-sized pieces
  • 1 large onion finely chopped
  • 2 cloves garlic minced
  • 1 tbsp ginger grated
  • 2 tbsp red curry paste
  • 1 can (14 oz) coconut milk full-fat
  • 1 cup chicken broth
  • 1 tbsp fish sauce
  • 1 tbsp brown sugar
  • 1 cup green beans trimmed
  • 1/4 cup cilantro chopped, for garnish

Method
 

  1. Heat the vegetable oil in a large skillet over medium heat. Add the chicken pieces and cook until browned on all sides, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  2. In the same skillet, add the chopped onion and cook until softened, about 3-4 minutes. Add the minced garlic and grated ginger, cooking for another minute until fragrant.
  3. Stir in the red curry paste and cook for 1-2 minutes to release its flavors. Pour in the coconut milk and chicken broth, stirring well to combine. Bring the mixture to a simmer.
  4. Return the browned chicken to the skillet. Add the fish sauce and brown sugar, stirring to incorporate. Simmer for 10 minutes, allowing the flavors to meld.
  5. Add the sliced red bell pepper and green beans to the skillet. Continue to simmer for another 5-7 minutes until the vegetables are tender but still crisp. Stir in the lime juice just before serving. Garnish with chopped cilantro.
