Ingredients
  

  • 8 oz penne pasta or any short pasta
  • 2 tbsp olive oil
  • 1 lb boneless, skinless chicken breasts cut into bite-sized pieces
  • 3 cloves garlic minced
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese plus more for serving
  • 1 cup chicken broth
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley chopped, for garnish

Method
 

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium-high heat. Add chicken pieces, season with salt and pepper, and cook until golden brown and cooked through, about 6-7 minutes.
  3. Reduce heat to medium, add minced garlic to the skillet, and sauté until fragrant, about 1 minute.
  4. Pour in the heavy cream, chicken broth, and Italian seasoning. Stir well and bring to a simmer.
  5. Gradually whisk in the grated Parmesan cheese until the sauce is smooth and creamy. Add the cooked pasta to the skillet and toss to coat with the sauce. Serve hot, garnished with fresh parsley and additional Parmesan cheese.
