Ingredients
  

  • 1 lb chicken tenders boneless, skinless
  • 4 russet potatoes large, washed and cut into fries
  • 1 cup panko breadcrumbs
  • 1/2 cup all-purpose flour
  • 2 eggs beaten
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp salt divided
  • 1/2 tsp black pepper divided
  • 2 tbsp olive oil

Method
 

  1. Preheat your oven to 425°F (220°C). Line two baking sheets with parchment paper for easy cleanup and to prevent sticking.
  2. In a shallow dish, mix the panko breadcrumbs with 1/2 tsp salt, 1/4 tsp pepper, garlic powder, and paprika. In another dish, place the flour. In a third dish, beat the eggs.
  3. Coat each chicken tender first in flour, then in the beaten eggs, and finally in the seasoned panko breadcrumbs. Place the coated tenders on one of the prepared baking sheets.
  4. Toss the cut potatoes with olive oil, remaining 1/2 tsp salt, and 1/4 tsp pepper. Spread them out on the second baking sheet.
  5. Bake both the chicken tenders and fries in the preheated oven. The chicken should take about 20-25 minutes, turning halfway through, while the fries will need 25-30 minutes, flipping them at the 15-minute mark. Serve hot and enjoy!
