- Preheat your oven to 400°F (200°C). Pat the chicken drumsticks completely dry with paper towels. This is the single most important step for crispy skin—trust me, moisture is the enemy of crispiness. Place the drumsticks in a large bowl.
- Drizzle the oil over the drumsticks and toss to coat evenly. In a small bowl, combine the paprika, garlic powder, onion powder, oregano, salt, black pepper, and cayenne (if using). Sprinkle this spice mixture all over the chicken and use your hands to massage it in, ensuring every nook and cranny is seasoned.
- Arrange the drumsticks on a wire rack set inside a rimmed baking sheet. This allows hot air to circulate all around the chicken, promoting even browning and preventing the bottom from steaming. Believe me, the rack makes a world of difference. Do not crowd them.
