- Place the chicken pieces, cream of chicken soup, chicken broth, diced onion, sliced celery, sliced carrots, dried thyme, and black pepper into the slow cooker. Stir to combine all ingredients evenly.
- Cover and cook on low for 4 hours. This slow cooking allows the flavors to meld beautifully and the chicken to become tender.
- After 4 hours, stir in the frozen peas. In a separate bowl, mix the biscuit mix with milk to form a soft dough for the dumplings.
- Drop spoonfuls of the dumpling dough onto the surface of the simmering chicken mixture. Cover and cook on high for an additional 30 minutes, or until the dumplings are cooked through and fluffy.
