Ingredients
  

  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts cut into bite-sized pieces
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 4 cups chicken broth
  • 1 can (14.5 oz) diced tomatoes undrained
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 package (9 oz) cheese tortellini fresh or frozen
  • 1 cup baby spinach
  • 1/4 cup grated Parmesan cheese for serving

Method
 

  1. Heat the olive oil in a large pot over medium heat. Add the chicken pieces and cook until browned, about 5-7 minutes. Remove the chicken and set aside.
  2. In the same pot, add the diced onion and cook until softened, about 3-4 minutes. Add the minced garlic and cook for another minute until fragrant.
  3. Pour in the chicken broth, diced tomatoes (with their juices), Italian seasoning, salt, and pepper. Bring the mixture to a boil.
  4. Once boiling, add the tortellini and cook according to package instructions, usually about 7-9 minutes, until tender.
  5. Return the cooked chicken to the pot, stir in the baby spinach, and let it wilt for about 1-2 minutes. Serve hot, garnished with grated Parmesan cheese.
