Ingredients
  

  • 2 lbs boneless, skinless chicken breasts cut into bite-sized pieces
  • 1 head cauliflower riced
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 4 oz cream cheese softened
  • 2 cloves garlic minced
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 1/4 cup chopped fresh parsley for garnish

Method
 

  1. Preheat your oven to 375°F (190°C). In a large skillet, heat the olive oil over medium heat. Add the chicken pieces, season with salt and pepper, and cook until they're no longer pink, about 7-8 minutes.
  2. While the chicken cooks, prepare the cauliflower rice by pulsing cauliflower florets in a food processor until they resemble rice grains. Set aside.
  3. In a large mixing bowl, combine the heavy cream, cream cheese, garlic, thyme, and rosemary. Whisk until smooth. Add the cooked chicken and cauliflower rice, mixing well to ensure everything is evenly coated.
  4. Transfer the mixture to a greased 9x13 inch baking dish. Sprinkle the shredded cheddar cheese evenly over the top.
  5. Bake in the preheated oven for 25-30 minutes, or until the casserole is bubbly and the cheese is melted and golden brown. Let it cool for a few minutes, then garnish with fresh parsley before serving.
