  • 2 cups cooked chicken shredded or chopped
  • 8 oz cream cheese softened
  • 1 cup sour cream
  • 1 packet ranch seasoning mix
  • 1 cup cheddar cheese shredded, divided
  • 1 cup mozzarella cheese shredded, divided
  • 6 slices bacon cooked and crumbled
  • 1 cup frozen peas optional
  • 1/2 cup green onions sliced, for garnish
  • 1/2 cup panko breadcrumbs optional, for topping

Method
 

  1. Preheat your oven to 350°F (175°C). In a large mixing bowl, combine the softened cream cheese, sour cream, and ranch seasoning mix. Mix until smooth and well combined.
  2. Add the shredded chicken, half of the cheddar cheese, half of the mozzarella cheese, and the crumbled bacon to the cream cheese mixture. Stir until everything is evenly distributed. If using, fold in the frozen peas.
  3. Transfer the mixture to a greased 9x13 inch baking dish. Spread it out evenly with a spatula.
  4. Sprinkle the remaining cheddar and mozzarella cheese over the top of the casserole. If using, add the panko breadcrumbs for a crunchy topping.
  5. Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly, and the top is golden brown.
