Ingredients

  • 1 whole chicken about 3-4 lbs, giblets removed
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika

Equipment

  • Crockpot or slow cooker
  • Meat thermometer

Method

  1. Rinse the chicken inside and out under cold water, then pat dry with paper towels. Rub the entire chicken with olive oil, ensuring it's evenly coated. This helps the seasonings stick and promotes browning.
  2. In a small bowl, mix together salt, black pepper, garlic powder, and paprika. Sprinkle this seasoning mix all over the chicken, including inside the cavity. Trust me, this simple blend will infuse the chicken with amazing flavor.
  3. Place the seasoned chicken breast-side up in your crockpot. No need to add any liquid; the chicken will release its own juices as it cooks. Cover and cook on low for 4 hours. The slow cooking process ensures the meat stays moist and tender.
  4. After 4 hours, check the internal temperature of the chicken with a meat thermometer. It should read 165°F (74°C) in the thickest part of the thigh. If it's not done, continue cooking for another 30 minutes and check again.
  5. Once cooked, carefully transfer the chicken to a serving platter. Let it rest for 10 minutes before carving. This resting period allows the juices to redistribute, ensuring every bite is succulent. Now, step back and admire your beautifully cooked chicken!

Notes

Chef's Tips:
• For extra flavor, you can add lemon halves and fresh herbs like rosemary or thyme inside the chicken cavity before cooking.
• Avoid overcooking the chicken; it can quickly go from juicy to dry.
• Serve with roasted vegetables or a simple salad for a complete meal.
Food Safety:
• Always use a meat thermometer to ensure the chicken reaches a safe internal temperature of 165°F (74°C)
• Refrigerate leftovers promptly and consume within 3-4 days
