- Preheat your oven to 425°F (220°C). Ensure your Dutch oven is large enough to fit the whole chicken snugly. Pat the chicken dry with paper towels for crispier skin.
- Mix the olive oil, salt, pepper, garlic powder, and paprika in a small bowl. Rub this mixture all over the chicken, inside and out. Place the lemon halves, thyme sprigs, and onion quarters inside the cavity of the chicken.
- Heat the Dutch oven on the stovetop over medium-high heat for about 5 minutes. Place the seasoned chicken breast-side up in the hot Dutch oven. Sear for about 5 minutes until the skin starts to brown.
- Cover the Dutch oven with its lid and transfer it to the preheated oven. Roast for about 1 hour and 15 minutes, or until the internal temperature of the thickest part of the thigh reaches 165°F (74°C).
- Remove the Dutch oven from the oven and let the chicken rest, covered, for 10 minutes before carving. This allows the juices to redistribute, ensuring a moist and flavorful chicken.
