- Season the chicken breasts with salt and pepper. Dredge them in flour, shaking off any excess. This helps create a golden crust and thickens the sauce later.
- Heat 2 tablespoons of butter and the olive oil in a large skillet over medium-high heat. Once hot, add the chicken and cook until golden brown, about 4-5 minutes per side. Remove the chicken and set aside.
- In the same skillet, add the remaining butter and sauté the mushrooms until they're browned and tender, about 5 minutes. This step adds depth to the sauce.
- Pour in the Marsala wine and chicken broth, scraping up any browned bits from the bottom of the pan. Let the sauce simmer and reduce by half, about 5-7 minutes.
- If using, stir in the heavy cream to create a richer sauce. Return the chicken to the skillet, spooning the sauce over it. Simmer for another 5 minutes until the chicken is cooked through and the sauce has thickened.
