- In a medium bowl or large measuring cup, whisk together the olive oil, lemon juice, minced garlic, Dijon mustard, dried oregano, 1 teaspoon kosher salt, 1/2 teaspoon black pepper, and red pepper flakes (if using) until well combined. This is your master marinade.
- Place the chicken breasts in a large resealable plastic bag or shallow dish. Pour the marinade over the chicken, ensuring all pieces are coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes and up to 4 hours. Trust me, even 30 minutes makes a world of difference.
- Preheat your grill to medium-high heat (about 400-450°F). Clean the grates thoroughly with a grill brush, then oil them well by dipping a folded paper towel in oil and using tongs to rub it over the grates. This prevents sticking.
- Remove the chicken from the marinade, letting excess drip off. Discard the used marinade. Season the chicken lightly with a pinch more salt and pepper. Place the chicken on the hot grill. Close the lid and cook for 5-7 minutes without moving it to develop beautiful grill marks.
- Using tongs, flip the chicken. Close the lid again and cook for another 5-7 minutes, or until the internal temperature reaches 165°F when checked with an instant-read thermometer inserted into the thickest part. Believe me, the thermometer is non-negotiable for perfect doneness.
- Transfer the grilled chicken to a clean plate or cutting board. Let it rest for 5 full minutes before slicing or serving. This allows the juices to redistribute, ensuring every bite is moist. Step back and admire your perfectly grilled chicken!
Notes
Chef's Tips:
• For the juiciest results, do not marinate chicken breasts for more than 4 hours as the acid can start to break down the texture.
• A common mistake is moving the chicken too soon on the grill. Let it sear undisturbed to get those signature marks.
• Serve with a fresh squeeze of lemon and a sprinkle of flaky sea salt for a bright finish.
Food Safety:
• Always marinate chicken in the refrigerator, never at room temperature.
• Discard used marinade that has been in contact with raw chicken. Do not reuse it as a sauce.
