  • 1 cup breadcrumbs panko recommended
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 large eggs beaten
  • 1/4 cup olive oil for greasing the baking dish

Method
 

  1. Preheat your oven to 400°F (200°C). Grease a 9x13 inch baking dish with olive oil to prevent sticking.
  2. In a shallow dish, combine the Parmesan cheese, breadcrumbs, garlic powder, oregano, salt, and pepper. Mix well to create the coating.
  3. Dip each chicken breast into the beaten eggs, ensuring it's fully coated, then dredge in the Parmesan mixture, pressing gently to adhere the coating evenly.
  4. Place the coated chicken breasts in the prepared baking dish. Bake for 20-25 minutes, or until the internal temperature reaches 165°F (74°C) and the coating is golden brown.
  5. Remove from the oven and let the chicken rest for 5 minutes before serving. Garnish with fresh parsley if desired.
