- Preheat your oven to 375°F (190°C). While the oven heats, prepare the stuffing by mixing the spinach, cream cheese, Parmesan cheese, and garlic in a bowl until well combined. Set aside.
- Using a sharp knife, carefully cut a pocket into the side of each chicken breast, being careful not to cut through the other side. Stuff each breast with the prepared mixture, securing the opening with toothpicks if needed.
- Season the outside of the chicken with salt, pepper, and paprika. Heat the olive oil in an oven-safe skillet over medium-high heat. Add the stuffed chicken breasts and sear until golden brown on both sides, about 3-4 minutes per side.
- Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the internal temperature of the chicken reaches 165°F (74°C).
- Remove the chicken from the oven and let it rest for 5 minutes before serving. Garnish with additional Parmesan cheese and fresh herbs if desired.
