- Pat the chicken pieces very dry with paper towels. This is crucial for getting a good sear instead of steaming. Season generously with black pepper (hold the salt as the soy sauce is plenty salty). In a small bowl, whisk together the soy sauce, broth, honey, rice vinegar, and sesame oil. Have your garlic, ginger, and cornstarch slurry ready to go.
- Heat 2 tablespoons of neutral oil in a large skillet or wok over medium-high heat until shimmering. Add the chicken in a single layer, working in batches if needed to avoid crowding. Let it sear undisturbed for 2-3 minutes until golden brown on one side, then stir and cook until just cooked through, about 4-5 minutes total. Transfer to a clean plate.

- Give the cornstarch slurry a final stir and slowly drizzle it into the simmering sauce while stirring constantly. The sauce will thicken into a glossy coating consistency in about 1 minute. Return the cooked chicken (and any accumulated juices) to the skillet. Toss everything together until the chicken and broccoli are evenly coated in the sauce. Remove from heat.
