Ingredients
  

  • 4 pieces bone-in, skin-on chicken thighs about 1.5 to 2 pounds total
  • 1.5 pounds Yukon Gold potatoes cut into 1-inch chunks
  • 1 large lemon zested and juiced (about 3 tbsp juice)
  • 4 cloves garlic minced
  • 2 tbsp fresh rosemary finely chopped (or 2 tsp dried)
  • 2 tbsp fresh thyme finely chopped (or 2 tsp dried)
  • 3 tbsp olive oil divided
  • 1 tsp kosher salt plus more to taste
  • 0.5 tsp black pepper freshly ground
  • 0.25 tsp red pepper flakes optional, for a hint of heat

Method
 

  1. Preheat your oven to 425°F (220°C). Pat the chicken thighs completely dry with paper towels. This is the single most important step for crispy skin. In a large bowl, whisk together the lemon zest, lemon juice, minced garlic, chopped rosemary, thyme, 2 tablespoons of olive oil, salt, pepper, and red pepper flakes (if using).
  2. Add the chicken thighs to the bowl with the marinade. Use your hands to rub the mixture thoroughly under the skin and all over the chicken. Let it sit at room temperature while you prep the potatoes—this 10-minute rest allows the flavors to start penetrating.
  3. Toss the potato chunks with the remaining 1 tablespoon of olive oil and a generous pinch of salt and pepper on your sheet pan. Arrange them in a single layer. Nestle the marinated chicken thighs, skin-side up, among the potatoes, pouring any remaining marinade from the bowl over everything.
  4. Bake on the middle rack for 35-40 minutes. Trust me, do not open the oven for the first 25 minutes to let the heat build properly. The chicken is done when the skin is deeply golden and crispy, the juices run clear (not pink), and an instant-read thermometer inserted into the thickest part of the thigh reads 165°F. The potatoes should be tender and golden.
  5. Remove the pan from the oven. Tip from me: let the chicken rest on the pan for 5-10 minutes before serving. This allows the juices to redistribute, ensuring every bite is moist. Garnish with a final sprinkle of fresh herbs and serve directly from the pan.
