- Heat the olive oil in a large, deep skillet or Dutch oven over medium-high heat. Season the chicken thighs with 1/2 teaspoon of salt and 1/4 teaspoon of pepper. Add the chicken, skin-side down, and cook until the skin is golden brown and crispy, about 6-7 minutes. Flip the chicken and cook for another 3 minutes. Remove the chicken from the skillet and set aside.
- In the same skillet, add the chopped onion and cook until softened, about 3-4 minutes. Add the minced garlic and cook for another minute until fragrant.
- Stir in the rice, chicken broth, paprika, thyme, and the remaining salt and pepper. Bring the mixture to a boil, then reduce the heat to low. Place the chicken thighs on top of the rice, skin-side up. Cover the skillet and simmer for 20-25 minutes, or until the rice is cooked and the chicken is tender.
- Remove the skillet from the heat and let it rest, covered, for 5 minutes. This allows the rice to absorb any remaining liquid and the flavors to meld together.
