Ingredients

  • 4 boneless, skinless chicken breasts pounded to 1/2 inch thickness
  • 1 cup all-purpose flour
  • 2 large eggs beaten
  • 2 cups panko breadcrumbs
  • 1 tsp salt
  • 1/2 tsp black pepper
  • vegetable oil for frying enough to fill a pan 1/2 inch deep
  • tonkatsu sauce for serving optional

Equipment

  • Meat mallet or rolling pin
  • Three shallow dishes for breading
  • Large skillet or frying pan
  • Cooking thermometer
  • Wire rack

Method

  1. Start by preparing your chicken. Place the chicken breasts between two sheets of plastic wrap and pound them until they're about 1/2 inch thick. This ensures even cooking and a tender result.
  2. Set up your breading station. In three separate shallow dishes, place the flour, beaten eggs, and panko breadcrumbs. Season the flour with salt and pepper. Trust me, this step is crucial for flavor!
  3. Dredge each piece of chicken in the flour, shaking off any excess. Then, dip it into the egg, allowing the excess to drip off. Finally, coat thoroughly with panko, pressing the breadcrumbs onto the chicken to ensure a good crust.
  4. Heat the vegetable oil in a large skillet over medium heat until it reaches 350°F. Carefully place the breaded chicken into the hot oil. Fry for about 4-5 minutes on each side, or until golden brown and cooked through.
  5. Once cooked, transfer the chicken to a wire rack to drain excess oil. Let it rest for a few minutes before slicing. Serve hot with tonkatsu sauce and a side of shredded cabbage. Now step back and admire your perfect Chicken Katsu!

Notes

Chef's Tips:
• For the crispiest results, use fresh panko breadcrumbs.
• Avoid overcrowding the pan when frying to maintain oil temperature.
• Serve with a side of rice and miso soup for a complete Japanese meal.
Food Safety:
• Ensure chicken is cooked to an internal temperature of 165°F
• Store leftovers in the refrigerator within two hours of cooking
