Method
 

  1. Start by preparing your chicken. If using raw chicken, poach it in simmering water for about 15-20 minutes until fully cooked. Let it cool, then shred or dice into small pieces.
  2. In a large mixing bowl, combine the mayonnaise, Dijon mustard, and lemon juice. Whisk until smooth and well blended.
  3. Add the shredded chicken, chopped celery, and red onion to the bowl. Mix gently to coat all ingredients evenly with the dressing.
  4. If using, fold in the halved grapes and sliced almonds for added texture and sweetness. Season with salt and pepper to taste.
  5. Chill the chicken salad in the refrigerator for at least 30 minutes before serving to allow the flavors to meld. Serve as a sandwich, in a wrap, or over a bed of greens.
