- In a bowl, combine the yogurt, garam masala, turmeric, cumin, paprika, and salt. Add the chicken pieces and marinate for at least 10 minutes, or up to an hour if you have time.
- In a large skillet, melt the butter over medium heat. Add the chopped onion and cook until softened and translucent, about 5 minutes. Stir in the garlic and ginger, cooking for another minute until fragrant.
- Add the marinated chicken to the skillet, including any remaining marinade. Cook, stirring occasionally, until the chicken is browned on all sides, about 5-7 minutes.
- Pour in the tomato puree, heavy cream, and sugar. Stir well to combine, then bring the mixture to a simmer. Reduce the heat to low and let it cook for 10-15 minutes, allowing the flavors to meld and the sauce to thicken slightly.
- Taste and adjust seasoning if needed. Serve hot over rice or with naan, garnished with chopped cilantro.
