  • 2 cups rotisserie chicken shredded
  • 1 can cream of chicken soup 10.5 oz
  • 1 cup sour cream
  • 1 cup cheddar cheese shredded
  • 1 cup frozen mixed vegetables thawed
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups cooked rice
  • 1 cup breadcrumbs optional, for topping
  • 2 tablespoons butter melted, optional, for topping

Method
 

  1. Preheat your oven to 350°F (175°C). In a large mixing bowl, combine the shredded rotisserie chicken, cream of chicken soup, sour cream, half of the cheddar cheese, mixed vegetables, garlic powder, onion powder, salt, and pepper. Mix well until all ingredients are evenly distributed.
  2. Fold in the cooked rice, ensuring it's well coated with the mixture. Transfer this to a greased 9x13 inch baking dish, spreading it out evenly.
  3. Sprinkle the remaining cheddar cheese over the top of the casserole. If using, mix the breadcrumbs with the melted butter and sprinkle this over the cheese layer for added crunch.
  4. Bake in the preheated oven for 25-30 minutes, or until the casserole is bubbly and the top is golden brown.
  5. Remove from the oven and let it rest for 5 minutes before serving. Garnish with fresh herbs if desired.
