Ingredients
  

  • 1.5 lbs boneless, skinless chicken breasts cut into 1-inch pieces
  • 3 cups chicken broth low-sodium preferred
  • 1 cup carrots sliced
  • 1 cup celery sliced
  • 1 cup potatoes diced
  • 1 onion yellow onion chopped
  • 2 cloves garlic minced
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 bay leaf bay leaf
  • 1/2 cup frozen peas added at the end
  • 2 tbsp cornstarch mixed with 2 tbsp water for thickening
  • Salt and pepper to taste

Method
 

  1. Place the chicken pieces, carrots, celery, potatoes, onion, and garlic into the slow cooker. Pour in the chicken broth and add the thyme, rosemary, and bay leaf. Stir to combine.
  2. Cover and cook on low for 6 hours or on high for 3 hours, until the chicken is cooked through and the vegetables are tender.
  3. About 30 minutes before serving, stir in the frozen peas. Mix the cornstarch with water to create a slurry, then stir it into the stew to thicken. Continue cooking until the stew reaches your desired consistency.
  4. Season with salt and pepper to taste. Remove the bay leaf before serving.
