- In a medium bowl, whisk together honey, soy sauce, ketchup, and minced garlic until well combined. Set aside.
- Heat vegetable oil in a skillet over medium-high heat. Add diced onion and cook until softened, about 3-4 minutes. Transfer onions to the slow cooker.
- Place chicken thighs in the slow cooker on top of the onions. Pour the honey garlic sauce over the chicken, ensuring all pieces are coated.
- Cover and cook on low for 4 hours or until the chicken is tender and cooked through.
- Once cooked, remove the chicken from the slow cooker and set aside. In a small bowl, mix cornstarch and water to create a slurry. Stir the slurry into the sauce in the slow cooker and cook on high for 10-15 minutes until thickened.
- Return the chicken to the slow cooker, coating it with the thickened sauce. Serve hot, garnished with sliced green onions and sesame seeds.
