Ingredients
  

  • 1.5 lbs boneless, skinless chicken breasts cut into bite-sized pieces
  • 1 cup uncooked long-grain white rice
  • 2 cups chicken broth
  • 1 lemon juiced and zested
  • 2 tbsp olive oil
  • 2 cloves garlic minced
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup frozen peas optional, added at the end

Method
 

  1. In the slow cooker, combine the chicken broth, lemon juice, and lemon zest. Stir well to mix.
  2. Add the uncooked rice to the slow cooker, ensuring it's evenly distributed in the liquid.
  3. In a small bowl, mix the olive oil, minced garlic, thyme, rosemary, oregano, salt, and pepper. Toss the chicken pieces in this mixture until well coated.
  4. Place the seasoned chicken on top of the rice in the slow cooker. Cover and cook on low for 4 hours or until the chicken is cooked through and the rice is tender.
  5. If using, stir in the frozen peas during the last 30 minutes of cooking. Serve hot, garnished with additional lemon slices and fresh herbs if desired.
