  • 4 bone-in chicken thighs skin on
  • 1 cup buttermilk
  • 1 tsp hot sauce
  • 1 cup all-purpose flour
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1/2 tsp cayenne pepper
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 cups all-purpose flour for waffles
  • 1 tbsp sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt for waffles
  • 2 large eggs
  • 1 3/4 cups milk
  • 1/2 cup vegetable oil for waffles

Method
 

  1. Marinate the chicken thighs in buttermilk and hot sauce for at least 2 hours, or overnight for best results. This helps tenderize the meat and adds flavor.
  2. In a shallow dish, mix flour, paprika, garlic powder, cayenne pepper, salt, and black pepper. Dredge the marinated chicken in the seasoned flour, ensuring it's well coated.
  3. Heat vegetable oil in a deep fryer or large pot to 350°F. Carefully add the chicken pieces and fry until golden brown and cooked through, about 15 minutes. Use a meat thermometer to ensure the internal temperature reaches 165°F.
  4. For the waffles, whisk together flour, sugar, baking powder, and salt in a large bowl. In another bowl, beat eggs, then stir in milk and oil. Combine wet and dry ingredients until just mixed.
  5. Preheat your waffle maker and pour batter into it, cooking according to the manufacturer's instructions until golden and crispy. Serve the fried chicken atop the waffles, drizzled with maple syrup.
