- Season the chicken breasts with salt and pepper on both sides. Dredge each piece in flour, shaking off any excess.
- In a large skillet, melt 2 tablespoons of butter with the olive oil over medium-high heat. Add the chicken and cook for about 6-7 minutes per side, until golden brown and cooked through. Remove the chicken from the skillet and set aside.
- In the same skillet, add the remaining 2 tablespoons of butter. Once melted, add the sliced onion and bell peppers. Sauté for about 5 minutes, until softened. Add the minced garlic and cook for another minute.
- Pour in the chicken broth, heavy cream, Dijon mustard, dried thyme, and paprika. Stir to combine and bring to a simmer. Let the sauce cook for about 5 minutes, until slightly thickened.
- Return the chicken to the skillet, nestling it into the sauce and vegetables. Spoon some of the sauce over the chicken. Simmer for another 5 minutes to heat through. Garnish with fresh parsley before serving.
