- Preheat your oven to 375°F (190°C). In a large mixing bowl, combine the shredded chicken, 1/2 cup of enchilada sauce, 1/2 cup of shredded cheese, sour cream, green onions, cumin, and garlic powder. Mix until well combined.
- Warm the tortillas in the microwave for about 30 seconds to make them pliable. Spoon about 1/4 cup of the chicken mixture onto each tortilla and roll it up tightly. Place the rolled enchiladas seam-side down in a greased 9x13 inch baking dish.
- Pour the remaining enchilada sauce over the top of the enchiladas, ensuring they are well coated. Sprinkle the remaining shredded cheese evenly over the top.
- Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly, and the enchiladas are heated through.
- Remove from the oven and let cool for 5 minutes. Garnish with chopped fresh cilantro before serving.
