  • 2 1/2 cups all-purpose flour plus more for dusting
  • 1 tsp fine sea salt divided
  • 1 cup unsalted butter cold, cut into 1/2-inch cubes
  • 6-8 tbsp ice water
  • 1 1/2 lbs boneless, skinless chicken thighs or a mix of thighs and breasts
  • 4 tbsp unsalted butter
  • 1 medium yellow onion diced
  • 2 medium carrots peeled and diced
  • 2 stalks celery diced
  • 2 cloves garlic minced
  • 1/3 cup all-purpose flour
  • 2 1/2 cups chicken broth preferably low-sodium
  • 1/2 cup heavy cream or whole milk
  • 1 cup frozen peas
  • 2 tbsp fresh parsley chopped, plus more for garnish
  • 1 tsp fresh thyme leaves or 1/2 tsp dried
  • 1/2 tsp black pepper freshly ground
  • 1 large egg for egg wash

Method
 

  1. Make the pie dough. In a large bowl, whisk together 2 1/2 cups flour and 1/2 tsp salt. Add the cold, cubed butter. Using a pastry cutter or your fingertips, work the butter into the flour until the mixture resembles coarse crumbs with some pea-sized butter pieces remaining. Drizzle in ice water, 1 tbsp at a time, mixing gently with a fork until the dough just begins to clump together. Divide into two discs, wrap tightly in plastic, and chill for at least 1 hour. Trust me, this rest is non-negotiable for a flaky crust.
  2. Cook the chicken and vegetables. While the dough chills, season the chicken with salt and pepper. In a large skillet or Dutch oven, melt 1 tbsp butter over medium-high heat. Cook the chicken until golden and cooked through, about 6-8 minutes per side. Transfer to a plate to cool, then shred or cube. In the same pot, melt the remaining 3 tbsp butter. Add onion, carrots, and celery, cooking until softened, about 8 minutes. Add garlic and cook for 1 more minute until fragrant.
  3. Build the creamy filling. Sprinkle the 1/3 cup flour over the cooked vegetables and stir constantly for 2 minutes to cook out the raw flour taste. This creates your roux. Gradually whisk in the chicken broth, ensuring no lumps remain. Bring to a simmer and cook, stirring, until thickened, about 3-5 minutes. Remove from heat and stir in the cream, frozen peas, parsley, thyme, remaining 1/2 tsp salt, pepper, and the cooked chicken. Taste and adjust seasoning. Let the filling cool slightly while you roll the dough.
  4. Assemble the pie. On a lightly floured surface, roll one dough disc into a 12-inch circle. Carefully transfer it to a 9-inch deep-dish pie plate. Gently press it in. Pour the slightly cooled filling into the crust. Roll out the second dough disc. Brush the edges of the bottom crust with water, then place the top crust over the filling. Trim and crimp the edges to seal. Cut a few slits in the top to vent. Chill the assembled pie for 15 minutes. Preheat your oven to 400°F (200°C).
  5. Bake and serve. Whisk the egg with 1 tbsp water to make an egg wash. Brush it generously over the top crust. This is the secret to that deep golden shine. Place the pie on a baking sheet (to catch any drips) and bake for 40-50 minutes, until the crust is deeply golden brown and filling is bubbling through the vents. Tip from me: If the edges brown too quickly, cover them with foil. Let the pie rest for 15-20 minutes before slicing. This allows the filling to set for clean slices.
